Per a blog on her Poosh lifestyle website, Kourtney spent six to seven months "easing" into a plant based lifestyle, which entails no meat and the "occasional" butter and honey. "If you're thinking about becoming vegan, you can make the shift in small waves if that's easier for you," suggests the post. "Start by replacing meat with plant-based options once a week and increase from there. Kourt admits when she first started, she couldn't resist and had a baked crab handroll while at dinner during the first few weeks. It's all about balance and finding how and when you're comfortable with incorporating the changes into your lifestyle."
For her first meal of the day, Kourtney will drink either her signature avocado shake or banana smoothie, subbing vegan protein powders. She might also nibble on gluten-free and vegan cinnamon toast, a blueberry bagel from Yeastie Boys in L.A. smothered with peanut butter and jelly, an acai bowl (here is one of her go-to recipes.) If it is a "treat" day, she might enjoy vegan chicken and waffles from Crossroads (find the recipe in their cookbook).
For a mid-morning snack, Kourtney loves pickles and tangerines or Mindright bars (peanut butter flavor is her favorite.)
An average lunch for Kourtney might be this Zoodles dish (minus the turkey bacon) or sourdough bread with vegan butter and topped with pickles with a side of tangerines.
Two of Kourt's go-to plant-based dinners? Plant-based tacos or vegan sushi at Nobu. Her go-to order is crispy rice with avocado, edamame, and an avocado roll.
